Cinnamon Coffee Loaf

Ingredients

  • Cinnamon Sugar: 1/4 cup (50g) sugar
  • Cinnamon Sugar: 2 tsp (5g) cinnamon
  • Streusel: 1/3 cup (42g) flour
  • Streusel: 1/3 cup (67g) brown sugar
  • Streusel: 1/2 tbsp (4g) cinnamon
  • Streusel: 1/4 cup (57g) unsalted cold butter
  • Cake: 1/4 cup (57g) unsalted butter (melted/soft)
  • Cake: 1/4 cup (50g) sugar
  • Cake: 2 1/2 tbsp (31g) light brown sugar
  • Cake: 1 tsp (4g) vanilla
  • Cake: 1 egg
  • Cake: 1 cup (125g) flour
  • Cake: 3/4 tsp (3g) baking powder
  • Cake: 1/4 tsp (1g) baking soda
  • Cake: 1/2 tsp (3g) salt
  • Cake: 1/3 cup plus 1 tbsp (95g) buttermilk

Directions

  1. Mix together the cinnamon sugar ingredients and set aside.
  2. For the streusel, mix together flour, brown sugar, and cinnamon well. Add in the cold butter and use a pastry cutter (or food processor) to cut the butter into the mixture until it is crumby but holds together when pinched.
  3. Preheat oven to 350°F (175°C).
  4. In a bowl, cream together the melted butter and sugars well, then add in the egg and vanilla.
  5. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Add about a third of the flour mixture into the butter/sugar mixture and gently fold.
  7. Alternate by adding about half the buttermilk and fold. Keep alternating between adding the flour and buttermilk.
  8. In a 9x5 loaf pan, pour half the batter, then layer on the cinnamon sugar mixture, followed by the other half of the batter.
  9. Top with the streusel and bake for 50-60 minutes. A toothpick should come out clean from the batter, though you may see cinnamon sugar on the toothpick.
